Orange Almond Cupcakes




Easy delicious orange and almond cupcakes.

Cooking Time: 20-25 minutes
Makes: 12 cupcakes
Ingredients:
  1. Butter,softened- 6 tbsp (85 gms)
  2. Castor sugar/fine granulated sugar - 6 tbsp (approx 85gms)
  3. Egg,lightly beaten- 1 large
  4. All purpose flour - 9 tbsp ( 85gms)(i used whole wheat flour)
  5. Ground almonds - 4tbsp
  6. Salt- 1/8 tsp
  7. Baking Powder - 1/2 tsp
  8. Orange zest- from one small orange
  9. Orange juice - from one small orange(approx 50 to 60 ml)
Orange glaze:
  1. Orange zest- from one small orange
  2. Orange juice - from one small orange(approx 50 to 60 ml)
  3. Castor sugar/fine granulated sugar- 4 tbsp(or to taste)
  4. Toasted,flaked almonds - 1 or 2 tbsp
Instructions:
  • Preheat oven to 180 Deg C.Line the cupcake tray with paper cases.In a  large bowl,whisk together butter and sugar until pale and fluffy.
  • Add egg and mix well until well combined.
  • Now add flour ,ground almonds,baking powder and salt.Mix gently just until combined.Do not over mix.
  • Add the orange zest and juice and mix gently using a spoon just until combined.
  • Spoon the batter into the paper cases (fill about 2/3 full)and bake for 20 to 25 minutes or until a skewer inserted into the center of a cupcake comes out clean.Let cool in the pan for 10 minutes,then transfer to a wire rack .

  • To prepare the glaze combine the ingredients listed under orange glaze(except flaked almonds) in a sauce pan.Cook over medium flame ,stirring continuously for about 5 minutes.Allow to cool slightly.Prick the cupcakes allover with a skewer and drizzle the warm orange glaze on top.Finally sprinkle the flaked almonds on top.Allow to cool completely.
