Coriander Chutney with coconut

Quick and easy coriander chutney for Idli/Dosa
Prep Time: 5 minutes .
Cooking Time: 5 minutes
Serves: 2 to 3
Ingredients:

  1. Shallots,sliced- 2 to 3
  2. Garlic,chopped – 2 cloves
  3. Green chilies,chopped- 2 or 3 (according to taste)
  4. Coriander leaves,chopped – 3/4 cup
  5. Grated coconut – 1/2 cup
  6. Tamarind – 1 generous pinch(or to taste)
  7. Water – as required
  8. Salt- to taste
  9. Oil- as required

For Tempering:

  1. Mustard Seeds- 1/2cup
  2. Red chilies ,cut into two- 1
  3. Curry leaves- 1 sprig
  4. Oil- as required

Instructions:

  • Heat oil in a pan,add shallots,garlic and green chilies,saute until the raw smell leaves.Next add coriander leaves and stir well.
  • Add the grated coconut and switch off the flame.Stir well ,add tamarind and salt to  taste.Allow to cool slightly and transfer this into a blender along with sufficient quantity of water ,grind until smooth.
  • Transfer the chutney into a serving bowl.For tempering,heat oil in a pan,add mustard seeds and let it splutter.Add dry red chilies and curry leaves.Saute for few seconds and pour this over the chutney.Serve with dosa or idli.
