Quilon Chicken Fry

Ingredients:

  1. Chicken drumstick – 8 to 10 pieces(1kg)
  2. Water- 1/4 cup
  3. Curry leaves – few
  4. Green chilies,sliced – 2
  5. Garlic,skin on ,crushed- 3 to 4
  6. Coconut oil,for deep frying – as required

Ingredients-for marination:

  1. Turmeric powder- 1/2 tsp
  2. Kashmiri chili powder-  3 tsp
  3. Coriander powder – 2 tsp
  4. Garlic,skin on,crushed- 3 to 4 cloves
  5. Salt – to taste

For batter:

  1. All purpose flour – 3 tbsp
  2. Cornflour- 3 tbsp
  3. Egg,beaten – 1/2 of a small
  4. Ginger -garlic paste – 2 tbsp
  5. Green chili paste- 1 tsp(or according to taste)
  6. Turmeric powder – 1/4 tsp
  7. Coriander powder – 1.5 tsp
  8. Black pepper powder – 2 tsp
  9. Kashmiri chili powder – 3 tsp
  10. Garam masala powder – 1.5 tsp
  11. Curry leaves,chopped-few
  12. Lemon Juice – from half of a lemon
  13. Salt – to taste

Instructions:

  • In a pan/manchatti combine together all the ingredients listed under’for marination’ .Rub this onto the chicken and set aside for about 10 to15 minutes.Cover and cook the marinated chicken with 1/4 cup water until 3/4 th done.Keep aside.(reserve the stock to prepare the batter.)

  • Now to prepare the batter combine together all the ingredients listed under’For Batter’ with the remaining stock and sufficient quantity of water to form a slightly thin batter.

  • Heat oil in a heavy bottomed pan.Dip the cooked chicken in the batter to evenly coat all the sides.Do this in batches.

  • Fry the chicken in batches until crisp on all the sides.Once the chicken is almost done add the curry leaves,green chilies and garlic ,fry for few seconds and drain onto a kitchen towel.

  • Pour the remaining batter in the oil ,stir well and fry until crisp and brown.Drain the batter scraps and add this on to the fried chicken and serve immediately.

  • NOTES

    • 1 cup=250ml
    • Adjust the quantity of green chilies according to your taste.
